This cocktail has so many different variations to the recipe but I’ve chosen this recipe which best suits my taste.

My friends know I'm such a hoarder when I go out for drinks I take every opportunity to take home small garnish gems (of course with permission
from the restaurant/bar).

I visited a bar in North London called Laki Kane and was given the wooden tiki charm I used for this image which I absolutely love!

*Top Tip: Only use alcohol 40% and over to create the flame as anything below will not work!

*Safety Tip: Wherever you pour the alcohol, the fire will light, so make sure you place the alcohol accurately in the passionfruit cup only and wipe down any additional spillages!

Flavour profile: Strong, sweet and smoky!

Ingredients:

30ml White rum
30ml Dark rum
30ml Apricot brandy
50ml Orange juice
50ml Pineapple juice
30ml Lime juice
Dash of Grenadine syrup
Passionfruit pulp (1 half)

Method:

• Mix White rum, Dark rum, Apricot brandy, Orange juice, Pineapple juice and Lime juice to a shaker and pour into a tiki cup over ice

• Add a dash of grenadine and passion fruit pulp

Garnish:

• Place a sugar cube into an empty passionfruit half and fill with alcohol

• Use a blowtorch to ignite the alcohol and sprinkle cinnamon to achieve a brighter flame
