Pineapple & Coconut Punch

A guide on how to make the perfect pineapple punch to spice up your summer!

As soon as the sun comes out, I love to make refreshing cocktails that I can enjoy in the garden. It's also an excuse to invite friends and family over for a BBQ.  

However, making individual cocktails for multiple guests can take time away from actually enjoying the weather and relaxing. I find that the best solution for this is to make bulk, punch-style drinks so that you can simply make it once and occasionally top up when it runs low. Punches are also great for guests to serve themselves and add ice or garnish amounts to suit their liking. 

Flavour profile: Fruity, refreshing and tropical 

The bitter lemon soda and lime juice provide a lovely zesty flavour which balances out the sweetness of the pineapple. Check out the recipe below! 


Ingredients:

Vodka

Amaretto

Lime juice

Pineapple & coconut juice

Top with Bitter lemon soda

Method:

Add all the ingredients to a punch bowl filled with ice and stir

Garnish:

Lemon slices, pineapple leaves, pineapple slices

Notes: Measurements depend on your taste and the volume you are making. A good starting point for a fairly balanced drink add equal parts of each ingredient and then adjust each ingredient to suit your desired taste. For a stronger/sweeter drink add more amaretto. For a stronger drink add more vodka. For more fruitiness/sweetness add more fruit juice. For more bitterness add more bitter lemon soda. If your drink is too sweet balance it out with more lime juice!
